		<description>An interesting read, thank you for putting it up.

I&#039;d never heard of the Epicurian line before, it looks interesting, although I believe I&#039;ll stick to my wooden boards (I&#039;m a woodworker) rather than composite materials. It&#039;s nice to see a good line of equipment that&#039;s made here in the U.S.

I noticed you mentioned Sabatier knives, that also is my preference, I&#039;d heard of them for some time and on a trip South stopped in the K-Sabatier outlet off of I-95 in South Carolina. So far the K-Sabatier knives are the only ones whose balance suits both my wife and myself.

It&#039;s also interesting to read about Washington — I&#039;m a native born Washingtonian, although I left the area in the mid-80s for southwestern Virginia. I miss the fresh seafood.
